Ingredients:
Stuffing:
- 3 x cups bread crumbs
- 1 x Onion, finely chopped
- Salt & Pepper
Garlic Butter:
- 150g Butter
- 5 x Cloves finely diced garlic
- 1 x Handful finely chopped parsley
- Salt & Pepper
- 2 x Small chickens or 1 x medium chicken
- Salt & Pepper
Preparation:
- Combine 150g butter, garlic, parsely and salt and pepper together and set aside.
- Combine stuffing ingredients together in a bowl and bring together.
(This can be done ahead of time at home and taken to camp in a clip seal bag) - Add stuffing to the chicken cavity, taking care to fill it completely.
- Using your finger, separate the breast, and stuff with garlic butter.
- Season your chicken generously with salt and pepper an put your chicken on the rotisserie skewer.
- Cook over a low heat for roughly an hour or until chickens are crispy and golden on the outside and serve!
