INGREDIENTS
Half dozen oysters
Thin sliced bacon
Worcestershire Sauce
Method:
- Fire up your OzPig with smoker attachment to around 250-350F (120-175c).
- Thinly slice bacon into ½ cm long matchsticks.
- In heatproof dish, fill loosely with aluminium foil folded in half (covers all base).
- Add oysters and push into foil so they can’t move during the cook.
- Pile bacon on top of oysters.
- Add a decent glug of Worcestershire Sauce.
- Smoke until bacon cooked (approx. 8-15mins depending on smoker temp).
- Serve on bed of rock salt with lemon wedges.
Hint: They’re cooked when the bacon is crisp and browned.
Depending on the oyster, you may find there is some liquid residue that pools in the shell during the cook, pour most of this out and add in more Worcestershire sauce at the end.
Serve with an ice cold beverage – something with Blood Orange works a treat to hit all the flavour palate!
Rest on bench for two minutes before serving!
