INGREDIENTS
2kg jap pumpkin
1 red capsicum
1 red onion
2 tbsp olive oil
1/2 can brown lentils
1 cup walnuts
2 tbsp honey Yoghurt dressing
1 small tub Greek yoghurt
1 tsp lemon zest
2 tbsp lemon juice
2 tbsp olive oil
2 tsp fresh mint & coriander
Spice mix
1 tsp ground cumin
1 tsp ground coriander
1 tsp ground paprika
1 tsp ground cardamom
1/2 tsp mixed spice
Salt to taste
Method:
- Bring your Ozpig up to 350fn (180c).
- Mix spices together for spice mix
- Dice pumpkin, removing seeds, slice capsicum into 6- removing seeds, slice onion into 8 wedges, drizzle with salt & pepper & a tsp cumin powder spice mix
- Place pumpkin into Ozpig Oven Smoker in trays and roast 45 min till cooked through
- Add honey to fry pan and place on Ozpig, when honey bubbles add walnuts & 1tsp spice mix, stir & remove to plate
- Chop coriander & mint, zest lemon, Add yoghurt, lemon zest, lemon juice, salt to bowl, stir in olive oil till combined, stir in chopped mint & coriander
- Remove veg into a large pan, top with lentils & your choice of watercress or micro herbs, mint & coriander leaves
- Drizzle with dressing & honey walnuts
