INGREDIENTS
1 tbls Ozpig chicken (or other flavoured) rub
1 x leek
1 red onion
350g bacon
½ cup Red Leicester cheese
½ cup vintage cheese
1 carrot
1 zucchini
400ml thickened cream
8 xl size eggs
2 sheets puff pastry
Oil for frying and pie dish
Method:
- Prepare Ozpig Big Pig or Series 2 for cooking on hot place.
- Prepare vegetables – slice leek, onion, grate carrot and zucchini and squeeze out excess juice with paper towel. 3. Grate cheese, dice bacon, measure cream to bowl, crack in eggs, add chicken rub, whisk cream mix.
- Oil pie dish/s, add pastry, when softens mould into dish/sAdd oil to how plate, sauté onion – remove, fry leek and bacon till caramelises. 5. Remove flat plate, add smoker and bring to 180˚C.
- Into pastry shell add zucchini, carrot, leek, onion, bacon, ½ of cheese, pour over cream mix, top with remaining cheese.
- Bake in smoker at 180˚C for 40 mins or till egg is firm and pastry golden, remove, slice & enjoy.
