INGREDIENTS
Gumbo
1/2 an onion
1 green capsicum
1 stick of celery
4 cloves of garlic, minced
700g chicken thighs
1 jalapeno, finely diced
1 tbsp flour
1L Chicken stock
330ml beer
4 bay leaves
1tsp dried thyme
2 smoked sausages
200g okra
Oil
Salt & Pepper
Shallots
Steamed rice (to serve)
Cajun spice mix (see below)
Cajun Spice Mix
2 tbsp paprika
2 tbsp garlic powder
2 tbsp dried oregano
1 tbsp coarse salt
2 tsp course black pepper
2 tsp cayenne pepper
METHOD:
Cajun Spice
- Combine all ingredients in a bowl and mix well.
Gumbo
- Dice onion, celery and capsicum. Crush garlic. Finely dice jalapeno. Slice okra and sausage.
- Prep the Ozpig and a pan for medium high heat. Add some oil to the pan and sear chicken thighs seasoned with salt, pepper and Cajun spice. Cook for around 4-5 minutes until crispy and browned the turn over and repeat on the other side. Once cooked through, deglaze your pan with some beer and set aside.
- While cooking your chicken, heat the camp oven or casserole dish with oil and bring to a high temperature until the oil begins to smoke. Add flour and cook out until you have a nice dark roux. Make sure to stir this often as it will burn easily.
- Add the onion, celery and capsicum to the roux, cook for a few minutes until vegetables have softened. Add the garlic and jalapenos and cook out again for a few minutes.
- Add some beer and cook out into a nice smooth, thick gravy. Add your chicken stock and stir until smooth.
- Add your chicken, sausage, okra, thyme and bay leaves then season fairly heavily with salt and pepper.
- Cover with a lid and allow to cook out for an hour or so (or longer) on a low heat.
- Serve with white steamed rice and sliced spring onions.
