INGREDIENTS
2 cups flour
1 tsp salt
1 cup warm milk
1 pack dry yeast
1 tsp castor sugar
1 cup warm water
1/2 tsp baking soda
Method:
- Dissolve yeast and sugar in the milk and let it rest for 10 minutes until frothy. In a large bowl combine the flour and salt.
- Add the milk to the flour and knead until a dough forms. Cover the bowl and set it in a warm place for at least an hour to let the dough rise.
- Dissolve the baking soda in the water and add it to the dough. Mix into a batter, it's easiest to use an electric mixer for this step but if you don't have one handy, a good solid whisk and lots of patience will do.
- Cover the batter and let it rest in a warm place for at least 30 minute. After that the batter should be nice and bubbly.
- Prepare the Ozpig for a medium heat and warm up your pan and rings. I use a bit of canola spray to grease everything up.
- Once the rings are hot, pour the batter into each ring until it's slightly more than half full. Cook the crumpets for around 8-10 minute until the bottom is golden brown and the classic crumpet holes have formed on the top.
- Remove the rings and turn your crumpets. Cook for 3-4 minutes until the tops are golden brown too.
- Serve with butter, jam and honey, or however you have your crumpets. You can eat these strait off the Ozpig or chuck them in the fridge for the toaster later.
