INGREDIENTS
2 cups mixed fruit
1 cup pitted prunes (chopped)
½ cup walnuts (chopped)
Juice and rind of one orange
1/3 cup fireball
¼ cup golden syrup
2 eggs (lightly beaten)
2/3 cup thickened cream
2/3 cup brown sugar
1 cup plain flour
2 tsp ground cinnamon
1 tsp ground nutmeg
½ tsp bicarb soda
Fireball Butterscotch Sauce
1 cup brown sugar
80g unsalted (good quality) butter
1 tsp vanilla bean paste or 1x vanilla bean pod (don’t use the nasty essence stuff)
100ml thickened cream
Method:
Pudding:
- Place mixed fruit, prunes, walnuts, orange juice, rind, fireball and syrup into a bowl and combine.
- Mix eggs, cream, nutmeg and bicarb together and then gently fold into fruit mixture.
- Using a 5 cup pudding tin, spray with oil and add in mixture.
- Foil the pudding tin, crunching the edges so no steam can escape and then cover with lid.
- Fire up Ozpig with large saucepan of water and bring to boil (water should come half way up pudding tin).
- Boil for 5hrs (topping up water frequently).
- About an hour before you are ready to eat the pudding, lightly smoke it in the Ozpig Oven Smoker (put a bed of foil underneath the pudding whilst smoking)
- Ensure it is a relatively light (not heavy) smoke, as you just want to warm the pudding and not over-smoke it
Sauce:
- In small saucepan over the Ozpig, melt butter (low heat).
- Add sugar and stir constantly until dissolved.
- Add vanilla bean paste and cream (remove from heat).
- Cover pudding in icing sugar (go heavy!), add raspberries on top (for colour) and then when your guests are ready, zap fireball in microwave for 20 seconds and then pour over pudding and light!
- The icing sugar once combined with the sweet Fireball creates the perfect glaze. Serve with fireball butterscotch sauce!
