INGREDIENTS:
300g chicken mince
4 dried shiitake mushrooms
1 tsp soy sauce
1/4 tsp sesame oil
2 shallots
1/2 tsp five spice powder
1 tsp fresh ginger
1/2 packet spring roll wrappers
2 tsp plain flour
2 tsp water
Frying oil
Method:
- Cover mushrooms in boiling water. Cover with plastic wrap to stop heat escaping. Soak for 20 minutes. Drain. Discard the stems.
- Slice the mushrooms, chill.
- Chop shallots, grate ginger.
- Place mince in bowl. Mix in soy, sesame oil five spice, ginger, mushrooms & shallots till combined.
- Mix plain flour & water in small bowl (used to stick spring rolls together).
- Pull all spring roll wrappers apart. Lay on bench & cover with damp paper towel.
- li>Take 1 wrapper place 1 heaped teaspoon on corner of wrapper, folding in the edges. When near the end dip finger in flour mix and spread on edge, finish rolling. Roll remaining mix. Chill.
- Fill Ozpig wok half way, heat, place in 3 spring rolls at a time cook 2 min till browned. Remove with tongs, drain.
