If you love pork belly and Korean sweet and spicy sauces, this recipe is an absolute treat! Rendering the fat in the belly slices makes a huge difference, so make sure you get that heat roaring hot!
INGREDIENTS
Nut Loaf
1 large brown onion
2 carrots
2 celery stalks
½ a tomato
3 cloves of garlic
2 tbsp of Za’atar (middle eastern thyme based spice mix)
2 cans of chickpeas, drained
1 can of cherry tomatoes, drained
1 cup of water or vegetable stock 1 cup of breadcrumbs
3 eggs
½ cup of finely chopped coriander stalks
1 cup of feta cheese
Finely chopped mixed nuts Pomegranate molasses or honey
Salt and pepper
Sauce
1 cup of Greek yogurt Pomegranate molasses or honey
Olive oil
Za’atar
Method:
- In a food processor, blitz the onion, carrots, celery, ½ tomato and garlic. Alternatively, you could finely chop these ingredients.
- Sauté the vegetables until soft.
- Add 2 tbsps. of Za’atar and continue to sauté.
- Blitz the chickpeas in a food processor or again, finely chop.
- Add the chickpeas to the vegetables and continue to cook.
- Add the can of cherry tomatoes, trying not to bust them up.
- Add the water or stock.
- Once the mixture is soft, allow it to cool for around 30-40 minutes.
- Bring the Oven Smoker to 180 degrees Celsius and line a bread tin with baking paper or oil.
- Mix in the eggs to the loaf mix and add the coriander stalks, breadcrumbs and feta cheese.
- Transfer to the baking tin and add a handful of finely chopped mixed nuts to the top with a drizzle of pomegranate molasses. Alternatively, you could use honey.
- Bake for 30 minutes covered with foil, then remove the foil and bake for a further 20 minutes or until firm to touch and golden on top. Sauce:
- Mix the Greek yogurt, molasses or honey, olive oil and Za’atar and serve with warm nut loaf.
