INGREDIENTS
Sweet Short Pastry
150g butter
75g castor sugar
50g egg (pretty much 1 egg) 300g flour
Vanilla essences
Filling
3 eggs at room temperature
1 cup castor sugar
1/4 cup brown sugar
1 tsp salt
1 1/2 tsp vanilla
1/4 cup melted butter
1/2 cup corn syrup (glucose)
1 1/2 cup chopped pecans
Method:

Filling
- Combine butter, sugar and vanilla then mix until there is no lumps.
- While mixing, gradually add egg.
- Add the flour and mix until a smooth paste.
- Wrap in plastic and store in the fridge.
- Pin out the sweet paste and line your tart pan. Gently press into the pan and refrigerate for 30 minutes before trimming off excess pastry.
- Prep the Ozpig and camp oven for medium heat.
- Combine egg, sugar, salt, vanilla, butter and glucose. Mix until well combined.
- Add the pecans and mix then pore into the pastry lined pan.
- Check your camp oven temperature, your looking for around 170°C. If you're good to go, place the tart pan on an aluminium tray on top of a trivet in the camp oven and close the lid. Place some hot coles on top of the lid for radiant heat from above.
- Allow to bake for around an hour or until the pie is cooked through. Remove from the oven and place on a rack to cool then refrigerate.
- Once cooled, remove pie from the pan, cut into slices and serve with vanilla ice cream.
