1x Pork Belly (about an A4 sized piece)

2x carrots

½ cup Peas

500g mashing potatoes (peeled and large diced)

1x jar apple sauce


20x street tacos


  • 2 days before you want to eat this meal, you must heavily coat the pork belly and let it dry in the fridge (minimum 48hrs).
  • Wipe off salt cap and score with sharp knife and then prick 5,000 holes just deep enough that the skin pierces, don’t go much deeper.A Jaccard will do this job in about 2 minutes.
  • Fire up your OzPig using the Rotisserie attachment and load pork belly onto rotisserie rod.
  • Lightly coat in oil and season with decent sprinkle of pink (or any course) salt.
  • Cook until crackling has formed and internal meat is 190F (88C).
  • While pork is cooking boil potatoes, strain and mash with full cream milk and 1tbsp good quality butter.
  • Julienne (thick) carrots and boil peas in small pot of water.
  • Once pork is done, with a sharp knife (and crackle facing down), cut the pork belly into small bit size pieces.
  • Warm the tacos by placing them on a hot pan for 5-10 seconds each side.
  • Smear mash on taco, load with pork belly, couple of carrot pieces, peas, apple sauce and then drizzle with Sriracha.

Great bit of kit

We have the ozpig series 2 under a patio. Only just bought the house and the pig so we haven't got it in a specific final spot just yet. But having these extra offset and pieces helps keep smell and smoke (not that there is much using nice ironbark) definitely recommend this kit for use under a patio. Plus fast and easy postage made buying them easy as. 5 Stars

Exactly what I was looking for

- I was looking for something wood-fired and portable that I could take anywhere to boil water and cook a meal on and that could also be my home BBQ. The Pig is simpler and safer than a camp fire and a great back-up at home if everything goes down. I’ve only done BBQs so far and I’m enjoying the added wood-smoke taste. Looking forward to cooking more sophisticated meals down the track.
