3 lobster tails

1/2 red onion

2 small red chillies

2 tsp grated fresh ginger

1/2 cup tomato sauce

1 1/2 tbsp soy sauce

1 1/2 tbsp sweet chilli sauce

1 tbsp hoisin sauce

2 tsp fish sauce

1 tbsp rice wine vinegar

1/2 cup coriander

1/2 cup fish stock

1 tbsp cornflour

1/4 cup diced coriander & handful coriander leaves

3 shallots


Chilli Sauce

  • Dice red onion finely, slice chilli put in separate containers
  • Dice coriander and leave some leaves intact to garnish
  • In the container with the chilli add tomato sauce, soy sauce, sweet chilli sauce, hoisin sauce, fish sauce & red wine vinegar, stir to combine. Set aside
  • Slice shallots in half longways & slice into thin strips on the diagonal. Place shallots into bowl with iced water to curl.
  • Add cornflour and 2 tbsp fish stock in bowl & stir.
  • Using a large sharp chefs knife pierce in the middle of the back of lobsters and split lobster in half.
  • Add oil to Ozpig wok, heat. Fry lobsters meat side down for 1 min, flip and fry on shell side for 1 minute. Remove to dish on warming plate.
  • Fry grated ginger in wok with oil, add sauce mix, chilli & diced coriander to wok. Bring to simmer, return lobster tails. Add lid & cook for 5 minutes. Lift lid, pour in remaining fish stock, stir through. Add cornflour & fish stock mix to liquid to thicken.
  • Remove to plate & serve with sauce, curled shallots & coriander leaves.

Great bit of kit

We have the ozpig series 2 under a patio. Only just bought the house and the pig so we haven't got it in a specific final spot just yet. But having these extra offset and pieces helps keep smell and smoke (not that there is much using nice ironbark) definitely recommend this kit for use under a patio. Plus fast and easy postage made buying them easy as. 5 Stars

Exactly what I was looking for

- I was looking for something wood-fired and portable that I could take anywhere to boil water and cook a meal on and that could also be my home BBQ. The Pig is simpler and safer than a camp fire and a great back-up at home if everything goes down. I’ve only done BBQs so far and I’m enjoying the added wood-smoke taste. Looking forward to cooking more sophisticated meals down the track.
