First, make the marinade. Place the garlic, ginger, and onion in a bowl. Add honey, lemon juice, brown sugar and salt, cumin and coriander. Then mix all the ingredients well.
Using a pastry brush, cover the scotch fillet with the marinade and place it into your Ozpig oven smoker for 3-4 hours. Basting with marinade every 20 minutes.
Once cooked, rest the scotch fillet for 10 minutes then slice into steaks and chargrill for extra flavour.
