Rotisserie Chicken - Offroad Adventures

Ingredients

  • 150g butter
  • Garlic (2–3 cloves, minced)
  • Fresh parsley, chopped
  • Salt
  • Pepper
  • 3 cups breadcrumbs
  • 1 onion, finely chopped
  • Whole chicken

Directions

  1. Combine 150g butter, garlic, parsely and salt and pepper together and set aside.
  2. Combine stuffing ingredients together in a bowl and bring together.
  3. (This can be done ahead of time at home and taken to camp in a clip seal bag)
  4. Add stuffing to the chicken cavity, taking care to fill it completely.
  5. Using your finger, separate the breast, and stuff with garlic butter.
  6. Season your chicken generously with salt and pepper an put your chicken on the rotisserie skewer.
  7. Cook over a low heat for roughly an hour or until chickens are crispy and golden on the outside and serve!

NOTE: BOTTLED RIB SAUCE MAY BE USED BUT HOMEMADE SAUCE WINS EVERY TIME!
