Ozpig Chicken Stir Fry

Ingredients

  • 1 bowl shredded or finely sliced veggies - carrot, capsicum, snow peas, celery
  • tbsp olive oil
  • 1 lb chicken breast (455 g), cubed
  • 2 cm piece fresh ginger, finely chopped
  • 2 garlic cloves, finely sliced
  • Lemongrass, finely chopped
  • Sweet chili sauce
  • Cooked white rice or noodles, to serve
  • Salt and pepper to taste

Directions

  1. In a medium-sized bowl, mix together the sweet chili sauce, ginger, onion, garlic. Set aside.
  2. Add one tablespoon of olive oil to your wok and heat over medium to high heat on your Ozpig.
  3. Add the chicken breasts and season with salt and pepper.
  4. Cook for 3 to 5 minutes or until cooked through.
  5. Reduce heat to medium and add half your mixed veggies and sweet chili sauce stirring occasionally, just until tender.
  6. Add the cooked noodles and continue to mix.
  7. Add the remaining mixed vegetables and serve.
