Ingredients

  • You will need a 20cmx30cm lamington pan for this recipe.
  • _ cup S.R. Flour
  • _ cup caster sugar
  • _ desicated coconut
  • _ cup ground almonds
  • 60g unsalted butter, (melted)
  • 1 cup apricots chopped
  • 1 cup shredded coconut
  • 1 cup dark Choc Bits
  • 1/3 cup chopped hazelnuts
  • 1/3 cup pecan nuts
  • 1 x 400g can condensed milk
  • 1/3 cup flaked almonds

Directions

  1. Grease lamington pan and line base &
  2. 2 long opposite sides with baking paper, extending paper 5cm above edges of pan.
  3. Combine flour, sugar, desiccated coconut, ground almonds and butter in a large bowl and mix well.
  4. Press mixture evenly over the prepared base of the pan.
  5. Cook in a moderate oven 180 for about 10 minutes or until lightly browned.
  6. Remove from stove, quickly layer apricots, choc bits, shredded coconut, hazelnuts &
  7. pecans over base
  8. Drizzle condensed milk over the top and sprinkle with flaked almonds.
  9. Return slice to oven and cook for a further 15 minutes or until browned. Allow to cool in the pan before slicing.

Great bit of kit

We have the ozpig series 2 under a patio. Only just bought the house and the pig so we haven't got it in a specific final spot just yet. But having these extra offset and pieces helps keep smell and smoke (not that there is much using nice ironbark) definitely recommend this kit for use under a patio. Plus fast and easy postage made buying them easy as. 5 Stars

Exactly what I was looking for

- I was looking for something wood-fired and portable that I could take anywhere to boil water and cook a meal on and that could also be my home BBQ. The Pig is simpler and safer than a camp fire and a great back-up at home if everything goes down. I’ve only done BBQs so far and I’m enjoying the added wood-smoke taste. Looking forward to cooking more sophisticated meals down the track.
